Pampanella was historically made in the days following a pig slaughter, using cuts that needed to be preserved and enjoyed quickly, the generous vinegar marinade helping to both flavor and lightly cure the meat before a hot roast.

Ingredients

Equipment: Large bowl for marinating, Roasting pan

  • 1.2 kg (2.6 lb) pork shoulder or ribs, cut into pieces
  • 150 ml (⅔ cup) red wine vinegar
  • 6 cloves garlic, minced
  • 2 tbsp hot paprika or crushed chili
  • 1 tbsp sweet paprika
  • 2 bay leaves
  • 60 ml (¼ cup) extra virgin olive oil
  • Salt, to taste

Method

  1. Combine the vinegar, garlic, hot and sweet paprika, bay leaves, and a generous pinch of salt into a marinade.
  2. Coat the pork pieces thoroughly in the marinade, cover, and refrigerate for at least 12 hours, ideally 24.
  3. Remove the pork from the refrigerator and bring to room temperature.
  4. Arrange the pork in a roasting pan with a little of the marinade and drizzle with olive oil.
  5. Roast at 200°C (400°F) for 35–40 minutes, turning occasionally, until well browned and cooked through.
  6. Let rest briefly before serving hot.

  • The long marinade is essential both for flavor and for lightly tenderizing the pork — don't shorten it.
  • Use a generous amount of paprika and chili, as this dish is meant to have real heat and character.
