🍢 Arrosticini Abruzzesi
Arrosticini
Small skewers of cubed sheep meat, Abruzzo's single most iconic dish, grilled quickly over a long narrow charcoal brazier called a fornacella until charred outside and juicy within.
Arrosticini are so fundamentally tied to Abruzzo that specialized long, narrow grills called fornacelle were designed specifically to cook rows of these skewers at once, and the dish has become a genuine cultural symbol celebrated at festivals throughout the region.
Ingredients
Equipment: Fornacella or narrow charcoal grill, Skewers
- 1 kg (2.2 lb) mutton or lamb, cut into small cubes
- Salt, to taste
- Wooden or metal skewers
Method
- Thread the cubed meat tightly onto skewers, packing the pieces closely together.
- Prepare a hot charcoal fire, ideally in a narrow fornacella grill designed for arrosticini, or any hot grill.
- Grill the skewers directly over the hot coals, turning frequently, for about 8–10 minutes until well charred outside and cooked to your preference within.
- Season with salt as they come off the grill.
- Serve immediately, piping hot, traditionally eaten straight off the skewer.
Chef Tips
- Pack the meat cubes tightly on the skewers, leaving minimal gaps, which is traditional and helps even cooking.
- A narrow fornacella grill, if available, allows the fat to render away from the coals, preventing flare-ups.
- Turn the skewers frequently for even charring rather than leaving them still for long stretches.
Common Mistakes to Avoid
- Overcooking, which can dry out the small, quick-cooking pieces of meat.
- Spacing the meat too loosely on the skewers, losing the traditional dense, packed presentation.
- Over-seasoning before grilling — arrosticini are traditionally simple, salted only at the end.
