Scapece Vastese
Small fish lightly fried and then marinated in saffron-tinted vinegar for days, an Adriatic coastal specialty from Vasto designed originally to preserve the day's catch.
Scapece is a preservation technique with roots stretching back to ancient Rome, and this Vasto version's distinctive saffron-yellow color comes from steeping the spice directly in the vinegar marinade the fried fish rests in for several days before eating.
Ingredients
Equipment: Deep frying pan, Large glass or ceramic container for marinating
- 1 kg (2.2 lb) small whole fish (such as anchovies or smelts), cleaned
- Flour, for dredging
- Vegetable oil, for frying
- 500 ml (2 cups) white wine vinegar
- Pinch of saffron threads
- 2 cloves garlic, sliced
- Salt, to taste
Method
- Dredge the cleaned fish lightly in flour, shaking off the excess.
- Heat vegetable oil and fry the fish in batches until golden and crisp, then drain on paper towels.
- Warm the vinegar gently with the saffron and garlic, letting the saffron infuse and color the vinegar a deep yellow.
- Let the vinegar mixture cool slightly.
- Layer the fried fish in a glass or ceramic container and pour the warm vinegar mixture over, ensuring the fish is well covered.
- Cover and refrigerate for at least 2 days, ideally longer, allowing the fish to fully absorb the marinade.
- Serve cold or at room temperature.
