Torta al Testo
Umbria's beloved unleavened flatbread, traditionally cooked on a heavy flat stone called a testo, split open while hot and filled with cured meats, cheese, or sautéed greens.
Torta al testo takes its name from the terracotta or iron griddle it's traditionally cooked on, and its simple, quick-mixed dough makes it a practical, everyday bread that's just as often eaten split and stuffed as a sandwich as served alongside a meal.
Ingredients
Equipment: Testo (flat griddle) or heavy cast iron pan, Rolling pin
- 400 g (3 cups) 00 flour
- 250 ml (1 cup) warm water
- 1 tsp baking soda or baking powder
- 8 g (1½ tsp) salt
- 2 tbsp extra virgin olive oil
- Prosciutto, sausage, or sautéed greens, for filling
Method
- Combine the flour, baking soda, and salt in a bowl.
- Gradually add the warm water and olive oil, mixing into a smooth, slightly soft dough.
- Knead briefly, then rest, covered, for 20 minutes.
- Divide the dough into portions and roll each out into a round about 1cm thick.
- Heat a testo or heavy cast iron pan until very hot, with no oil.
- Cook each round for 5–7 minutes per side, until browned in spots and cooked through.
- Split the warm torta open like a pocket and fill with your choice of prosciutto, sausage, or sautéed greens.
- Serve immediately while warm.
