Ingredients
Equipment: Spit roaster or large oven, Long skewer or spit
- 1 whole suckling pig (about 6-8kg/13-18lb), cleaned and prepared by a butcher
- Coarse sea salt
- Fresh myrtle branches or rosemary, for aromatics
- Extra virgin olive oil
Method
- Season the cavity and skin of the pig generously with coarse salt.
- Stuff the cavity with fresh myrtle branches or rosemary.
- If spit-roasting, secure the pig on a spit and set up over a bed of hot embers, ideally myrtle or oak wood.
- Roast slowly, turning regularly, for 2.5–3 hours, basting occasionally with olive oil, until the skin is deeply golden and crackling and the meat is very tender.
- If oven-roasting, place in a large roasting pan at 160°C (325°F) for the same duration, increasing the temperature to 220°C (425°F) for the final 20 minutes to crisp the skin.
- Let rest briefly before carving and serving.
