Calabria's signature hand-rolled corkscrew pasta, twisted around a thin rod, tossed here with a slow-braised goat ragù that reflects the region's mountainous pastoral tradition.
Fileja is rolled around a thin wooden or metal rod called a fil-firriato, giving the pasta its characteristic spiral shape that catches sauce beautifully, and its pairing with goat meat is deeply rooted in Calabria's shepherding culture in the Vibo Valentia hills.
Ingredients
Equipment: Thin knitting needle or wooden dowel, Heavy-bottomed pot, Large pot for pasta
- 400 g (3 cups) 00 flour
- 200 ml (¾ cup plus 1 tbsp) warm water, approximately
- Pinch of salt
- 800 g (1.75 lb) goat meat, cut into pieces
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 2 cloves garlic, minced
- 200 ml (¾ cup plus 1 tbsp) dry red wine
- 500 g (1 lb) canned crushed tomatoes
- 1 dried chili, crumbled
- 80 ml (⅓ cup) extra virgin olive oil
- Grated pecorino, for serving
- Salt and pepper, to taste
Method
- Combine the flour, water, and salt into a firm dough, kneading for 10 minutes. Rest, covered, for 20 minutes.
- Roll small pieces of dough into thin ropes, then wrap each around a thin rod and roll to create the characteristic spiral shape, sliding it off once formed.
- For the ragù, warm the olive oil in a heavy pot and brown the goat meat well on all sides.
- Add the onion, carrot, celery, and garlic, sautéing until softened.
- Add the wine and let it reduce, then add the crushed tomatoes and chili.
- Cover and simmer gently for 2–2.5 hours, until the goat meat is very tender and falling apart, shredding it into the sauce with a fork.
- Bring a large pot of salted water to a boil and cook the fresh fileja for 4–5 minutes until tender.
- Drain the pasta and toss with the goat ragù, serving with grated pecorino.

- Rolling the pasta around a rod takes practice — a thin knitting needle or wooden dowel works well as a substitute for the traditional tool.
- Goat meat needs a genuinely long, slow braise to become properly tender — don't rush this step.
