Ingredients

  • 500 g (4 cups) bread flour
  • 130 g (⅔ cup) granulated sugar
  • 4 eggs, plus 3 egg yolks
  • 150 g (⅔ cup) unsalted butter, softened
  • 120 ml (½ cup) warm milk
  • 10 g (3 tsp) active dry yeast
  • 80 g (½ cup) candied orange peel, chopped
  • Zest of 1 orange
  • 5 g (1 tsp) salt
  • 2 egg whites, for the glaze
  • 80 g (⅔ cup) whole almonds
  • 60 g (½ cup) granulated sugar, for the glaze
  • 20 g (2½ tbsp) cornstarch, for the glaze
  • Pearl sugar, for topping

Method

  1. Dissolve the yeast in the warm milk with a pinch of sugar, and let sit for 10 minutes.
  2. Combine the flour, remaining sugar, and salt in a stand mixer, then add the eggs, yolks, and yeast mixture, kneading into a smooth dough.
  3. Gradually knead in the softened butter until fully incorporated and glossy.
  4. Add the orange zest, then let rise, covered, for 3-4 hours until doubled.
  5. Fold in the candied orange peel.
  6. Shape and place the dough into a dove-shaped colomba mold, then let rise again for 4-6 hours.
  7. For the glaze, whisk the egg whites with the sugar and cornstarch until smooth, then gently spread over the risen dough and scatter with whole almonds and pearl sugar.
  8. Bake at 170C (340F) for 35-40 minutes, tenting if needed, until a skewer comes out clean.
  9. Cool upside down on skewers, as with panettone, to prevent collapsing.
