Unlike the shattered crispness of carciofi alla giudia, this Roman preparation braises the artichokes low and slow until the leaves become almost creamy, the mint and garlic filling permeating every layer as it gently poaches in oil and wine.

Ingredients

Equipment: Bowl with acidulated water, Deep pot with lid

  • 4 large artichokes, trimmed
  • Juice of 1 lemon
  • 4 cloves garlic, minced
  • Fresh mint, chopped
  • Fresh parsley, chopped
  • 150 ml (⅔ cup) extra virgin olive oil
  • 150 ml (⅔ cup) dry white wine
  • Salt and pepper, to taste

Method

  1. Trim the tough outer leaves of each artichoke, peel the stem, and trim the top, placing trimmed artichokes in water with lemon juice to prevent browning.
  2. Combine the garlic, mint, and parsley into a mixture and gently stuff between the leaves and into the center of each artichoke.
  3. Arrange the artichokes stem-up in a deep pot just large enough to hold them snugly.
  4. Pour the olive oil and wine into the pot, and add enough water to come about a third of the way up the artichokes.
  5. Season with salt and pepper, cover, and simmer gently for 30-35 minutes, until the artichokes are tender when pierced.
  6. Let cool slightly and serve warm or at room temperature, spooning some of the braising liquid over.
