Unlike the piped, cream-topped zeppole di San Giuseppe, these Christmas zeppole are simpler — just soft, fried dough puffs, freshly made and eaten warm, a humble but deeply anticipated part of the Neapolitan holiday table.
Ingredients
Equipment: Mixing bowl, Deep pot for frying, Two spoons for shaping
- 300 g (2¼ cups) 00 flour
- 7 g (2¼ tsp) active dry yeast
- 250 ml (1 cup) warm water
- 1 tbsp granulated sugar, plus more for dusting
- Pinch of salt
- Vegetable oil, for frying
Method
- Dissolve the yeast in the warm water with the sugar and let sit for 5 minutes until foamy.
- Combine the flour and salt, then add the yeast mixture, mixing into a smooth, sticky batter — looser than a typical dough.
- Cover and let rise in a warm place for about 1 hour, until bubbly and doubled.
- Heat vegetable oil to 180°C (350°F).
- Using two spoons, scoop portions of the batter and carefully drop into the hot oil.
- Fry until deeply golden and puffed, about 3–4 minutes, turning as needed.
- Drain on paper towels and toss immediately in granulated sugar while still warm.
- Serve warm.

- The batter should be quite loose and sticky — resist adding extra flour to make it easier to handle.
- Using two spoons to shape and drop the batter, rather than trying to roll it, is the traditional and easiest method.
