Ingredients
Equipment: Large bowl-shaped baking dish, Wide pan for sauce and filling
- 500 g (2½ cups) risotto rice
- 1 L (4¼ cups) chicken stock
- 80 g (⅓ cup) unsalted butter
- 100 g (1¼ cups) grated Parmigiano-Reggiano
- 3 eggs
- 200 g (7 oz) ground beef, for small meatballs
- 150 g (5.3 oz) Italian sausage, sliced
- 150 g (5.3 oz) frozen peas
- 200 g (7 oz) canned crushed tomatoes
- 1 onion, chopped
- 200 g (7 oz) mozzarella, diced
- 80 g (1 cup) breadcrumbs, for the mold
- Extra virgin olive oil
- Salt and pepper, to taste
Method
- Cook the rice risotto-style in the chicken stock until just tender, then stir in the butter, Parmigiano, and eggs once slightly cooled. Set aside.
- Form small meatballs from the ground beef and brown them in a pan.
- In the same pan, sauté the onion, then add the sliced sausage and browned meatballs, along with the crushed tomatoes, and simmer for 15 minutes.
- Stir in the peas in the final few minutes.
- Butter a bowl-shaped baking dish and coat with breadcrumbs.
- Press about two-thirds of the rice mixture into the dish, building up the sides to form a well in the center.
- Fill the center with the meatball and sausage filling, and scatter with diced mozzarella.
- Cover with the remaining rice, sealing the filling completely inside.
- Bake at 190°C (375°F) for 30–35 minutes until golden.
- Let rest for 10 minutes, then invert onto a serving plate to unmold, revealing the dome shape.

- Building up the rice sides evenly around the dish creates the necessary well to hold the filling.
- Let the timbale rest before unmolding, which helps it hold together for a clean release.
