Ingredients

  • 150 g (1½ cups) almond flour
  • 100 g (¾ cup) semolina flour
  • 150 g (¾ cup) granulated sugar
  • 5 eggs, separated
  • 80 g (⅓ cup) unsalted butter, melted
  • Zest of 1 lemon
  • 200 g (7 oz) dark chocolate, melted, for coating

Method

  1. Whisk the egg yolks with the sugar until pale and thick.
  2. Fold in the almond flour, semolina, melted butter, and lemon zest.
  3. Whip the egg whites to stiff peaks, then gently fold into the batter in stages, being careful not to deflate it.
  4. Pour into a well-buttered dome-shaped or round pan.
  5. Bake at 180°C (350°F) for 30–35 minutes until a skewer comes out clean.
  6. Cool completely, then trim the top flat if needed to help the cake sit upright.
  7. Coat the cooled cake entirely in melted dark chocolate, using a spatula to create a smooth, even shell.
  8. Let the chocolate coating set completely before slicing.
