Ingredients
Equipment: Heavy saucepan, Wide tray, Candy thermometer
- 200 g (1½ cups) whole almonds, toasted
- 400 g (2 cups) granulated sugar
- 150 ml (⅔ cup) water
- 1 tsp lemon juice
Method
- Spread the toasted almonds on a tray and keep warm in a low oven.
- Combine the sugar, water, and lemon juice in a heavy saucepan and heat gently, without stirring, until it reaches about 115°C (240°F) on a candy thermometer.
- Working quickly, add the warm almonds to the syrup and stir gently to coat.
- As the mixture cools and the sugar begins to crystallize and turn cloudy, keep stirring continuously until each almond is coated in a rough sugar layer.
- Spread the coated almonds on a tray to cool and harden slightly.
- For a smoother finish, repeat the process with a fresh, thin batch of syrup, coating the almonds again for a second, more even layer.
- Let dry completely before serving or storing.
