Ingredients
Equipment: Large pot for the sausage, Separate pan for the turnips
- 1 musetto sausage (or a coarse pork sausage), about 500g/1.1lb
- 600 g (1.3 lb) brovada (fermented turnips) or substitute sauerkraut
- 1 onion, chopped
- 2 tbsp lard or olive oil
- Salt and pepper, to taste
Method
- Prick the musetto sausage all over and simmer gently in water for about 1.5–2 hours until tender, following any specific package instructions.
- Meanwhile, drain the brovada and rinse briefly if very sour.
- Warm the lard or oil in a pan and sauté the onion until softened.
- Add the brovada and cook over medium heat, stirring occasionally, for 25–30 minutes until tender, adding a splash of water if it looks dry.
- Season the brovada with salt and pepper.
- Once the sausage is tender, remove and slice thickly.
- Serve the sliced sausage alongside a generous portion of the brovada.
