Ingredients

Equipment: Round baking pan, Double boiler or heatproof bowl, Electric mixer

  • 200 g (7 oz) dark chocolate, chopped
  • 200 g (⅞ cup) unsalted butter
  • 5 eggs, separated
  • 200 g (1 cup) granulated sugar
  • 200 g (2 cups) almond flour
  • 1 tsp vanilla extract
  • Powdered sugar, for dusting

Method

  1. Melt the chocolate and butter together gently over a double boiler, then let cool slightly.
  2. Whisk the egg yolks with half the sugar until pale and thick.
  3. Fold the melted chocolate mixture into the egg yolks, then fold in the almond flour and vanilla.
  4. Whip the egg whites with the remaining sugar to stiff peaks.
  5. Gently fold the whipped egg whites into the chocolate mixture in stages, being careful not to deflate it.
  6. Pour into a well-buttered round baking pan.
  7. Bake at 180°C (350°F) for 30–35 minutes until the top is set and slightly cracked but the center remains fudgy.
  8. Cool completely in the pan — the cake firms up considerably as it cools.
  9. Dust with powdered sugar before slicing and serving.
