Ingredients

- 250 ml (1 cup) freshly squeezed lemon juice
- 200 g (1 cup) granulated sugar
- 750 ml (3 cups) water
- Zest of 2 lemons
Method
- Warm the water and sugar together just until the sugar dissolves, then remove from heat and let cool.
- Stir in the lemon juice and zest.
- Pour the mixture into a shallow, freezer-safe dish.
- Freeze for 30 minutes, then remove and rake thoroughly with a fork to break up the forming ice crystals.
- Return to the freezer and repeat the raking process every 30-45 minutes for about 3-4 hours total, until the mixture is entirely made up of loose, fine ice crystals.
