Ingredients
Equipment: Large bowl for soaking, Heavy-bottomed pan with lid
- 1 kg (2.2 lb) dried stockfish, soaked and rehydrated
- 4 potatoes, peeled and cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 500 g (1 lb) canned crushed tomatoes
- 80 g (1/2 cup) black olives, pitted
- 2 tbsp capers, rinsed
- 1 dried chili, crumbled
- 100 ml (scant 1/2 cup) extra virgin olive oil
- Fresh parsley, chopped
- Salt, to taste
Method
- Soak the stockfish in cold water for 2-3 days, changing the water several times daily, until fully softened.
- Drain, remove any skin and bones, and cut into large pieces.
- Warm the olive oil in a heavy pan and saute the onion and garlic until softened.
- Add the crushed tomatoes, olives, capers, and chili, and simmer for 10 minutes.
- Add the potatoes and enough water to almost cover, and simmer for 15 minutes until the potatoes begin to soften.
- Gently add the stockfish and simmer for another 20 minutes, until everything is tender.
- Finish with fresh parsley and serve hot.
