  • 80 g (1/3 cup) unsalted butter
  • 100 ml (scant 1/2 cup) whole milk
  • Salt and pepper, to taste

Method

  1. Prick the salama all over with a needle to prevent it from bursting during the long cook.
  2. Wrap the salama in a clean cloth and tie securely with kitchen twine.
  3. Suspend the wrapped salama in a tall pot of water using the twine, tied to a wooden spoon or stick laid across the top, so it hangs without touching the bottom or sides.
  4. Bring to a bare simmer and cook very gently for 4-5 hours, topping up water as needed, keeping the sausage fully submerged but never boiling vigorously.
  5. Meanwhile, boil and mash the potatoes with butter and milk until smooth, seasoning well.
