Ingredients
Equipment: Large pot, Blender or immersion blender, Small pan for pancetta
- 500 g (1.1 lb) cooked, peeled chestnuts
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 L (4 1/4 cups) vegetable stock
- 100 ml (scant 1/2 cup) heavy cream
- 60 g (2 oz) pancetta, diced (optional)
- 60 ml (1/4 cup) extra virgin olive oil
- Fresh thyme
- Salt and pepper, to taste
Method
- Warm the olive oil in a large pot and saute the onion, carrot, and celery until softened.
- Add the chestnuts and stock, and bring to a simmer.
- Cook for 20-25 minutes until the vegetables and chestnuts are very tender.
- Blend the soup until completely smooth, using an immersion blender or transferring to a standing blender.
- Return to the pot, stir in the cream, and gently reheat without boiling.
- Meanwhile, if using, cook the pancetta in a small pan until crisp.
- Season the soup to taste and serve hot, topped with crisp pancetta and fresh thyme.
