Mantua's deliberately crumbly almond and cornmeal cake, its name literally meaning 'the crumbly one,' meant to be broken apart by hand at the table rather than neatly sliced.
Sbrisolona's coarse, sandy texture is entirely intentional, achieved by keeping the butter cold and only barely working the dough together, and tradition dictates it should be cracked apart with a firm tap rather than cut with a knife.
Ingredients
Equipment: Round baking pan, Mixing bowl
- 150 g (1 1/8 cups) 00 flour
- 150 g (1 cup) coarse cornmeal
- 150 g (1 1/2 cups) almond flour
- 150 g (3/4 cup) granulated sugar
- 150 g (2/3 cup) cold unsalted butter, cubed
- 2 egg yolks
- 80 g (2/3 cup) whole almonds, roughly chopped
- Zest of 1 lemon
- Pinch of salt
- Powdered sugar, for dusting
Method
- Combine the flour, cornmeal, almond flour, sugar, and salt in a bowl.
- Work in the cold butter with your fingertips or a pastry cutter until the mixture resembles coarse, sandy crumbs.
- Add the egg yolks, chopped almonds, and lemon zest, mixing just until everything comes together loosely - the mixture should remain crumbly and not form a smooth dough.
- Crumble the mixture loosely and evenly into a buttered round baking pan, without pressing it down firmly.
- Bake at 170C (340F) for 25-30 minutes until golden.
- Cool completely in the pan.
- Dust with powdered sugar and serve by breaking into rustic pieces rather than slicing neatly.
