Moleche are small lagoon crabs caught precisely during the narrow window after they shed their hard shell and before the new one hardens, a fleeting seasonal specialty that Venetian fishermen have tracked and harvested for generations.

Ingredients

Equipment: Shallow dish for batter, Deep frying pan

  • 500 g (1.1 lb) live soft-shell crabs (moleche), cleaned
  • 2 eggs, beaten
  • 100 g (¾ cup) 00 flour
  • Vegetable oil, for frying
  • Salt, to taste
  • Lemon wedges, for serving

Method

  1. Rinse the cleaned crabs and pat dry.
  2. Dip each crab in the beaten egg, then dredge lightly in flour.
  3. Heat vegetable oil to 180°C (350°F).
  4. Fry the crabs in batches for 3–4 minutes until deeply golden and crisp.
  5. Drain on paper towels and season with salt.
  6. Serve immediately, hot, with lemon wedges — the entire crab, shell included, is eaten.
