Frittole
Calabria's own version of pork cracklings, mixed pig scraps slowly rendered in their own fat for hours until deeply crisp, historically prepared right after the seasonal pig slaughter.
Frittole makes thorough use of odds and ends from the pig — skin, ears, and various trimmings — slow-cooked in a large copper pot until the fat renders out and the meat turns intensely crisp, a genuinely nose-to-tail tradition.
Ingredients
Equipment: Large heavy pot
- 2 kg (4.4 lb) mixed pork scraps and trimmings (skin, ears, fatty cuts)
- 2 bay leaves
- 1 dried chili, crumbled
- Salt, to taste
- Orange zest (optional)
Method
- Cut the pork scraps into manageable pieces.
- Place in a large heavy pot with the bay leaves and a small amount of water to start the process.
- Cook over low heat for 2.5–3 hours, stirring occasionally, as the fat gradually renders out and the pieces slowly crisp in their own fat.
- In the final 30 minutes, increase the heat slightly and add the chili, stirring frequently until everything turns deeply golden and crisp.
- Season generously with salt, and orange zest if using.
- Drain briefly and serve warm.
