A protected, distinctively shaped durum wheat bread from Matera, its thick, deeply cracked crust and dense crumb the result of a long natural fermentation and traditional wood-fired baking.
Pane di Matera holds an official protected geographical status, its shape historically stamped with a family seal before being sent to communal ovens, and the bread's exceptionally long shelf life once made it a practical staple for the region's farming families.
Ingredients
Equipment: Large mixing bowl, Baking stone, Bread lame or sharp knife
- 500 g (3⅓ cups) durum wheat semolina flour
- 10 g (2 tsp) active dry yeast (or a natural starter)
- 300 ml (1¼ cups) warm water
- 10 g (1¾ tsp) salt
Method
- Dissolve the yeast in the warm water and let sit for 5 minutes.
- Combine the semolina flour and salt, then add the yeast mixture, kneading for 12–15 minutes until smooth and elastic — durum dough requires more kneading than standard wheat.
- Let rise, covered, for at least 4–6 hours at room temperature, or ideally overnight in the refrigerator for a slower, more flavorful fermentation.
- Shape the dough into its traditional horn or double-lobed shape.
- Let rise again for about 1–1.5 hours until nearly doubled.
- Score the top deeply and bake at 230°C (450°F) with steam (a pan of water in the oven) for the first 15 minutes, then reduce to 200°C (400°F) for another 40–45 minutes until deeply golden with a thick, cracked crust.
- Cool completely on a wire rack before slicing.
