Muufo
A dense, grilled cornmeal bread from Mogadishu, traditionally baked against the hot inner walls of a clay oven, its bottom crust deeply charred while the inside stays soft.
Muufo is closely associated with Mogadishu's coastal bakeries, historically cooked by slapping the flattened dough against the scorching inner wall of a clay tandoor-style oven, a technique that gives it a distinctively smoky, charred crust unlike any other Somali bread.
Ingredients
Equipment: Mixing bowl, Heavy skillet or griddle (or clay oven if available)
- 400 g (2 2/3 cups) fine cornmeal
- 100 g (3/4 cup) all-purpose flour
- 1 tsp active dry yeast
- 1 tsp salt
- 350 ml (1 1/2 cups) warm water, approximately
Method
- Dissolve the yeast in a little of the warm water and let sit for 10 minutes.
- Combine the cornmeal, flour, and salt in a bowl.
- Add the yeast mixture and remaining water, kneading into a firm, slightly sticky dough.
- Cover and let rise for about 1 hour.
- Divide into portions and shape into thick, flattened rounds.
- Heat a heavy skillet or griddle until very hot.
- Cook each muufo for 10-12 minutes total, turning occasionally, pressing gently, until deeply charred in spots on the outside and cooked through within.
- Serve warm.
