Method

  3. Add the cardamom, cinnamon, cloves, and cumin seeds to the remaining onions and cook briefly until fragrant.

  5. Add the drained rice and stir to coat in the spiced onion mixture.
  6. Add the raisins and water or stock, and season with salt.
  7. Bring to a boil, then reduce to the lowest heat, cover tightly, and cook for 18-20 minutes until the rice is tender and the liquid is absorbed.
  8. Let rest, covered, for 5 minutes, then fluff with a fork.
  9. Serve topped with the reserved caramelized onions.
