Ingredients

- 300 g (1 1/2 cups) small red or azuki beans, soaked overnight
- 1 L (4 1/4 cups) water
- 80 g (1/3 cup) ghee or butter
- 3-4 tbsp sugar, or to taste
- Pinch of salt
Method
- Drain the soaked beans and place in a large pot with the water.
- Bring to a boil, then reduce to a simmer and cook for 45-60 minutes, until the beans are completely tender and starting to break down.
