Small, diamond-shaped Somali fried dough bites, lightly sweetened and fried until golden and crisp, a favorite everyday snack and a fixture at celebrations.
Kac kac's simple, sturdy dough makes it a practical treat that keeps well for days, and its bite-sized diamond shapes have made it a common sight at Somali gatherings, served alongside tea or eaten on their own as a satisfying, not-too-sweet snack.
Ingredients
Equipment: Mixing bowl, Rolling pin, Deep frying pan
- 400 g (3 cups) all-purpose flour
- 80 g (1/3 cup) sugar
- 1 tsp baking powder
- 1/2 tsp ground cardamom
- Pinch of salt
- 1 egg
- 150 ml (2/3 cup) warm water, approximately
- 2 tbsp vegetable oil, plus more for frying
Method
- Combine the flour, sugar, baking powder, cardamom, and salt in a bowl.
- Whisk the egg with the oil, then combine with the dry ingredients along with enough warm water to form a firm dough.
- Knead for 5-8 minutes until smooth, then rest, covered, for 30 minutes.
- Roll the dough out to about half a centimeter thickness.
- Cut into diamond or square shapes using a knife.
- Heat vegetable oil to 170C (340F).
- Fry the pieces in batches for 3-4 minutes, until golden and cooked through.
- Drain on paper towels and cool before serving.
