A sweet Calabrian Easter bread shaped into decorative rings, baskets, or braids, each traditionally cradling one or more whole, unpeeled eggs baked directly into the dough.
Like Casatiello further north, cuddura's whole baked-in eggs carry deep symbolic meaning for Easter, though this Calabrian version leans distinctly sweet rather than savory, and is often shaped playfully — dolls for girls, baskets for boys — for children in the family.
Ingredients
Equipment: Mixing bowl, Baking sheet
- 500 g (4 cups) 00 flour
- 10 g (3 tsp) active dry yeast
- 150 ml (⅔ cup) warm milk
- 100 g (½ cup) granulated sugar
- 100 g (7 tbsp) unsalted butter, softened
- 3 eggs, plus 4-6 whole raw eggs for baking into the dough
- Zest of 1 lemon
- Pinch of salt
- Colorful sprinkles, for decorating
Method
- Dissolve the yeast in the warm milk with a pinch of the sugar and let sit for 5 minutes.
- Combine the flour, remaining sugar, salt, and lemon zest, then add the yeast mixture and 3 eggs, mixing into a dough.
- Gradually work in the softened butter until smooth and elastic.
- Let rise, covered, in a warm place for about 2 hours, until doubled.
- Divide the dough into portions and shape into rings, braids, or baskets as desired.
- Nestle whole, unpeeled raw eggs into each shape, securing with thin strips of reserved dough crossed over each egg.
- Let rise again for 30 minutes.
- Brush with a little beaten egg and scatter with colorful sprinkles.
- Bake at 180°C (350°F) for 20–25 minutes until golden.
- Cool before serving — the eggs cook through fully during baking.
