A dense, dark, naturally flourless chocolate and hazelnut cake from Vignola, its exact original recipe kept a closely guarded secret since the 1900s, though close home versions abound.
The original torta Barozzi recipe, created by a Vignola pastry shop over a century ago, remains a trade secret to this day, but the cake's intensely fudgy, coffee-and-rum-scented character has inspired countless home versions that capture its spirit closely.
Ingredients
Equipment: Round baking pan, Double boiler or heatproof bowl, Electric mixer
- 200 g (7 oz) dark chocolate, chopped
- 150 g (2/3 cup) unsalted butter
- 5 eggs, separated
- 150 g (3/4 cup) granulated sugar
- 100 g (1 cup) hazelnuts, toasted and ground
- 40 g (1/3 cup) cornstarch
- 2 tbsp strong brewed espresso
- 2 tbsp dark rum
- Powdered sugar, for dusting
Method
- Melt the chocolate and butter together gently over a double boiler, then let cool slightly.
- Whisk the egg yolks with half the sugar until pale and thick.
- Fold in the melted chocolate mixture, ground hazelnuts, cornstarch, espresso, and rum.
- Whip the egg whites with the remaining sugar to stiff peaks.
- Gently fold the egg whites into the chocolate mixture in stages, taking care not to deflate it.
- Pour into a well-buttered round baking pan.
- Bake at 170C (340F) for 35-40 minutes until the top is set but the center remains slightly fudgy.
- Cool completely before dusting with powdered sugar and slicing.

- Like torta caprese, the center should remain slightly underdone when removed from the oven, firming up as it cools into a dense, fudgy texture.
